DESCRIPTION: The Alpha fillet knife of Gude Solingen has a thin and narrow blade with a length of 8 inch made of stainless & hand-ground chrome vanadium molybdenum knife steel. It can use it, for example, to parry meat and fish or free them from skin and tendons. And then cut into wafer-thin pieces. The flexible steel of the 7 inch blade adapts even better to the tendon. Of course you can also use the filleting knife for many other cutting jobs.
Gude knives are hand-forged in Solingen, Germany from one piece of chrome-vanadium-molybdenum steel, from the blade tip to the double crop. The double crop, a special feature of Gude knives, is a counterweight to the blade. The knife is perfectly balanced. The special mixture of steel and the elaborate manufacturing process with more than 30 manual steps give the stainless steel blades with a hardness of approx. 57 HRC a special robustness and longevity.
